I love a showstopping Thanksgiving dessert as much as the next person, but sometimes you just need a little break from the big, fancy baking projects. That's where cookies come in, my friend. I'm talking about 20 ridiculously good recipes that are cute, cozy, and totally doable, so you can spend less time stressing and more time sneaking treats before dinner.

1. Caramel Apple Cookies

If you want a Thanksgiving treat that looks just as amazing as it tastes, this is the one. They're packed with caramel apple flavor, cream cheese, brown sugar, and plenty of warm spice. But seriously, just look at them. They are absolutely stunning and look like something I'd happily pay way too much for at a fancy bakery. Your guests are going to go crazy for these.

2. Pumpkin Spice Sugar Cookies

Sometimes the best holiday baking move is taking a classic I already love and giving it a tiny seasonal glow up. These start out as buttery, delicious sugar cookies, but then I fold those warm fall spices right into the dough. On top goes a creamy pumpkin spice icing that is just ridiculously good. A regular sugar cookie suddenly feels totally Thanksgiving ready.

3. Thanksgiving Oreo Turkey Cookies Recipe

This might just be the easiest and most kid friendly recipe on the whole list. Little helpers get to poke candy corn into the cookie filling to make the turkey feathers, which is my kind of activity. I love putting out lots of different candy corn colors and watching everyone create their own little flock of birds. Bigger candy eyes, or even the ones with little eyelashes, make them extra playful.

4. Thanksgiving Cookies

These are so clever and so much fun to build. A quick tip: when you grab the Bugles, make sure it's the caramel kind and definitely not the ranch. The sweet ones are much better sitting on top of Golden Oreos and icing. I love using fall colored candies to fill them up, but really, you can go wild with whatever you like. It's a cornucopia, after all.

5. Cranberry Pistachio Cookies

We've had lots of pumpkin spice around here, so how about a little change of pace? Cranberry and pistachio are basically a perfect match, both in color and in flavor. I absolutely adore the chewy, bright burst from the cranberries right next to that satisfying nutty crunch. A classic combo that feels so right for the holidays.

6. Sweet Potato Cookies

Sweet potato is such a rockstar ingredient, I swear I could use it in everything. Here it takes center stage as the base for these soft, ooey gooey cookies. A fun bonus is that they don't need as much added sugar or fat as other recipes. The sweet potato brings enough natural sweetness and moisture all on its own.

7. Pumpkin Whoopie Pies with Salted Caramel Cream Cheese Frosting

Whoopie pies are pure fun to make and even more fun to eat. I love that you can switch up the flavors and colors so easily. Since we're deep in turkey season, pumpkin feels just right. I bake the cakes with plenty of pumpkin spice and whip up a dreamy cream cheese filling with a hit of salted caramel. A handy whoopie pie tin helps them bake up perfectly uniform and adorable.

These are just hilarious and I am completely here for them. The secret to making them extra lovable is picking up some of those cute little candy eyes. If someone at your table isn't into Nutter Butters, I hear Milano cookies work beautifully as the base too.
